Ingredients:

For the Braised Beef Short Ribs:

  • 5 – 6 beef short ribs, 300-400g/10-14oz each
  • 1.5 teaspoons each salt and pepper
  • 2 tablespoons olive oil
  • 3 garlic cloves, crushed
  • 1 large onion, finely diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 tablespoons tomato paste
  • 2 cups (480ml) red wine (Merlot or Cabernet Sauvignon)
  • 2 cups (480ml) beef broth
  • 2 bay leaves
  • 1 sprig fresh thyme (or 1 teaspoon dried thyme)
  • 1 sprig fresh rosemary (or 1 teaspoon dried rosemary)
  • 2 tablespoons all-purpose flour (for optional thickening)
  • Salt and pepper, to taste

For the Garnish:

  • Fresh parsley, chopped (for garnish)

Instructions:

Step 1: Preheat the Oven

  1. Preheat your oven to 325°F (163°C).

Step 2: Prepare the Beef Short Ribs

  1. Season the beef short ribs with salt and pepper, ensuring they are well-coated.

Step 3: Brown the Short Ribs

  1. In a large, oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.
  2. Brown the beef short ribs on all sides, creating a golden crust. Work in batches if necessary to avoid overcrowding the pot.

Step 4: Sauté Aromatics

  1. Reduce the heat to medium. Add the crushed garlic, diced onion, carrots, and celery to the pot. Sauté until the vegetables are softened.

Step 5: Add Tomato Paste and Deglaze

  1. Stir in the tomato paste, allowing it to cook for a minute to enhance its flavor.
  2. Pour in the red wine, using a wooden spoon to scrape any browned bits from the bottom of the pot. Let it simmer for a few minutes to allow the alcohol to evaporate.

Step 6: Braise the Short Ribs

  1. Return the browned short ribs to the pot.
  2. Add the beef broth, bay leaves, thyme, and rosemary.
  3. Bring the liquid to a simmer.
  4. Cover the pot and transfer it to the preheated oven.
  5. Braise the short ribs for about 2.5 to 3 hours or until the meat is fork-tender.

Step 7: Optional Thickening (If Desired)

  1. If you prefer a thicker sauce, mix 2 tablespoons of flour with a bit of water to create a slurry. Stir it into the pot during the last 30 minutes of cooking.

Step 8: Garnish and Serve

  1. Once the short ribs are done, remove them from the oven.
  2. Taste and adjust the seasoning with salt and pepper.
  3. Garnish with freshly chopped parsley.
  4. Serve the braised beef short ribs over mashed potatoes, creamy polenta, or your preferred side.

Notes:

  • The choice of wine is crucial; pick a good-quality red wine that you would enjoy drinking, as its flavors will enhance the dish.
