Ingredients:

For the Enchilada Filling:

  • 1 pound lean ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar cheese

For the Enchilada Sauce:

  • 2 cups tomato sauce
  • 1 cup chicken or beef broth
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For Assembling and Topping:

  • 8-10 flour tortillas (8-inch size)
  • 1 1/2 cups shredded Mexican blend cheese
  • Chopped fresh cilantro (optional, for garnish)
  • Sliced jalapeños (optional, for garnish)
  • Sour cream (optional, for serving)

Instructions:

Step 1: Prepare the Enchilada Filling

  1. In a large skillet over medium heat, cook the ground beef, breaking it apart with a spoon, until it’s browned and cooked through.
  2. Add the chopped onion and minced garlic to the skillet. Sauté for a few minutes until the onion is soft and translucent.
  3. Stir in the ground cumin, chili powder, paprika, salt, and pepper. Cook for an additional 2 minutes to toast the spices.
  4. Add the black beans and corn to the skillet. Mix well and cook for another 2-3 minutes until heated through.
  5. Remove the skillet from heat and let the filling cool slightly.
  6. Stir in the shredded cheddar cheese until it’s well combined with the filling.

Step 2: Prepare the Enchilada Sauce

  1. In a separate saucepan, combine the tomato sauce, chicken or beef broth, chili powder, ground cumin, garlic powder, salt, and pepper.
  2. Simmer the sauce over low heat for about 10 minutes, stirring occasionally. This allows the flavors to meld together.

Step 3: Assemble the Enchiladas

  1. Preheat your oven to 375°F (190°C).
  2. Spoon a small amount of enchilada sauce into the bottom of a baking dish to prevent sticking.
  3. Take a tortilla and place a generous scoop of the beef filling in the center.
  4. Roll up the tortilla and place it seam-side down in the baking dish.
  5. Repeat this process with the remaining tortillas and filling, arranging them snugly in the baking dish.

Step 4: Top and Bake

  1. Pour the remaining enchilada sauce over the rolled tortillas, covering them generously.
  2. Sprinkle the shredded Mexican blend cheese evenly over the top.

Step 5: Bake and Serve

  1. Cover the baking dish with foil and bake for 20-25 minutes, or until the enchiladas are heated through, and the cheese is melted and bubbly.
  2. Optionally, you can remove the foil during the last 5 minutes of baking to allow the cheese to brown slightly.
  3. Once done, garnish your Tex-Mex Beef Enchiladas with chopped cilantro and sliced jalapeños if you like.
  4. Serve hot with a dollop of sour cream and enjoy your Tex-Mex flavor fiesta!
