Whether you’re looking for a delightful gift or a little personal indulgence, lemon truffles will brighten your day.

Ingredients:

For the Lemon Truffles:

  • 1 cup white chocolate chips
  • 1/4 cup heavy cream
  • Zest of 1 lemon
  • 2 tablespoons unsalted butter
  • 1 tablespoon lemon juice
  • 1/4 teaspoon lemon extract (optional for extra lemon flavor)
  • Pinch of salt

For Coating:

  • 1 cup white chocolate chips (for coating)
  • Zest of 1 lemon (for garnish)

Instructions:

Step 1: Prepare the Truffle Ganache

  1. In a microwave-safe bowl, combine 1 cup of white chocolate chips, heavy cream, lemon zest, unsalted butter, lemon juice, lemon extract (if using), and a pinch of salt.
  2. Heat the mixture in the microwave in 20-30 second intervals, stirring after each interval, until the chocolate is completely melted and the mixture is smooth. This should take about 1-2 minutes.

Step 2: Chill the Ganache

  1. Allow the ganache to cool to room temperature, and then refrigerate it for at least 2 hours or until it’s firm enough to handle.

Step 3: Form Truffle Balls

  1. Once the ganache is firm, use a teaspoon to scoop out portions and roll them into small truffle-sized balls. Place them on a baking sheet lined with parchment paper.

Step 4: Freeze the Truffles

  1. Place the truffle balls in the freezer for about 15-20 minutes to firm them up further. This will make them easier to coat in the next step.

Step 5: Prepare the Coating

  1. In a microwave-safe bowl, melt 1 cup of white chocolate chips in 20-30 second intervals, stirring after each interval, until smooth and completely melted.

Step 6: Coat the Truffles

  1. Using a fork, dip each truffle ball into the melted white chocolate to coat it completely. Allow any excess chocolate to drip off.
  2. Place the coated truffles back on the parchment-lined baking sheet.

Step 7: Garnish with Lemon Zest

  1. While the white chocolate coating is still wet, sprinkle a bit of lemon zest on top of each truffle.

Step 8: Chill and Serve

  1. Place the truffles in the refrigerator for about 30 minutes to set the coating.
  2. Once the chocolate coating is firm, your lemon truffles are ready to be served.

Step 9: Enjoy!

  1. Serve your lemon truffles as a delightful dessert or give them as a thoughtful gift to brighten someone’s day.

Lemon truffles are a delightful blend of citrusy zest and creamy chocolate that’s sure to put a smile on your face. These elegant treats are perfect for celebrations, gifts, or simply indulging in a moment of pure sweetness. With their velvety texture and refreshing lemon flavor, these truffles are the perfect way to add a touch of sunshine to your day.
