Ingredients:

For the Crust:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 6-8 tablespoons ice water

  • 4-5 medium-sized apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice
  • 2 tablespoons cornstarch

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, softened

Instructions:

Step 1: Prepare the Crust

  1. In a large mixing bowl, combine the all-purpose flour and salt.
  2. Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or your hands, work the butter into the flour until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, one tablespoon at a time, and mix until the dough just comes together. Be careful not to overmix.
  4. Divide the dough into two equal portions, shape them into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 2: Make the Apple Filling

  1. In a large mixing bowl, combine the diced apples, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, salt, lemon juice, and cornstarch. Toss everything together until the apples are well coated.

Step 3: Preheat the Oven

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.

Step 4: Roll Out the Crust

  1. Take one of the chilled dough discs and roll it out on a floured surface to fit the bottom of the baking dish. Place it in the dish.

Step 5: Add the Apple Filling

  1. Spread the prepared apple filling evenly over the crust.

Step 6: Add the Streusel Topping

  1. In a separate bowl, mix together the all-purpose flour, rolled oats, brown sugar, and softened unsalted butter to create the streusel topping.
  2. Sprinkle the streusel topping over the apple filling.

Step 7: Add the Top Crust

  1. Roll out the second chilled dough disc to fit the top of the bars. You can create a lattice pattern if you like.

Step 8: Bake the Bars

  1. Bake in the preheated oven for about 45-55 minutes or until the top is golden brown and the filling is bubbling.

  1. Allow the bars to cool in the pan for at least 30 minutes before cutting into squares.
