For the Enchiladas:

  • 2 cups cooked and shredded chicken
  • 8 flour tortillas
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

For the Enchilada Sauce:

  • 2 cups tomato sauce
  • 1/2 cup chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Step by Step:

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a mixing bowl, combine the softened cream cheese, half of the shredded cheddar cheese, chopped green onions, ground cumin, chili powder, salt, and pepper. Mix until well combined.
  3. In another bowl, mix the cooked and shredded chicken with a portion of the enchilada sauce. This creates a flavorful filling for the enchiladas.
  4. Warm the flour tortillas briefly in the microwave or on a dry skillet to make them pliable.
  5. Spoon the cream cheese mixture and the chicken filling onto each tortilla. Roll them up and place them seam side down in the greased baking dish.
  6. In a separate bowl, mix the remaining enchilada sauce ingredients – tomato sauce, chicken broth, ground cumin, chili powder, garlic powder, salt, and pepper. Pour this sauce over the assembled enchiladas.
  7. Sprinkle the remaining shredded cheddar cheese on top.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for about 20 minutes. Then, remove the foil and bake for an additional 5-10 minutes until the cheese is melted and bubbly, and the enchiladas are heated through.

As you take your first bite of these Cream Cheese Chicken Enchiladas, you’ll experience a medley of flavors dancing on your palate. The creaminess of the cream cheese, the savory notes of the chicken, the zesty tang of the enchilada sauce – they all come together in a delightful embrace.
