Classic Pot Roast

Classic Pot Roast is a timeless comfort food that warms the soul and pleases the palate. This recipe features a succulent chuck roast slow-cooked to tender perfection, surrounded by flavorful vegetables.   • 3 lb chuck roast, shoulder cut
  • Table salt and black pepper, to taste
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced or pressed
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 2 cups beef broth
  • 1 cup red wine (optional, can be substituted with more beef broth)
  • 2 sprigs fresh rosemary (or 1 tbsp dried rosemary)
  • 2 sprigs fresh thyme (or 1 tbsp dried thyme)
  • 1 bay leaf


Step 1: Season and Sear the Chuck Roast

  1. Preheat your oven to 325°F (160°C).
  2. Season the chuck roast generously with salt and black pepper.
  3. In a large ovenproof Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat.
  4. Sear the chuck roast on all sides until it’s nicely browned. This step locks in the flavor and juices.

Step 2: Sauté the Aromatics

  1. Add the chopped onion and minced garlic to the pot with the seared roast. Sauté for about 2-3 minutes until they become fragrant and translucent.

Step 3: Add the Vegetables and Herbs

  1. Surround the roast with the chopped carrots, potatoes, and celery.
  2. Pour in the beef broth and red wine (if using).
  3. Tuck the fresh rosemary, thyme, and bay leaf into the pot.

Step 4: Slow Cook the Pot Roast

  1. Cover the Dutch oven with a lid and place it in the preheated oven.
  2. Allow the pot roast to slow-cook for approximately 3-4 hours, or until the meat is fork-tender and easily pulls apart.
