For the Cherry Cake:

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups fresh or frozen cherries, pitted and halved

For the Cherry Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons cherry juice (from the cherries)

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch square baking pan or a similar-sized round cake pan.

Step 2: Prepare the Dry Ingredients

  1. In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set this dry mixture aside.

Step 3: Cream the Butter and Sugar

  1. In a large mixing bowl, cream the softened unsalted butter and granulated sugar together until it’s light and fluffy.

Step 4: Add the Eggs and Vanilla

  1. Beat in the eggs, one at a time, followed by the pure vanilla extract. Mix well after each addition.

Step 5: Alternate Dry Ingredients and Buttermilk

  1. Gradually add the dry flour mixture to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined, being careful not to overmix.

Step 6: Fold in the Cherries

  1. Gently fold in the pitted and halved cherries into the cake batter.

Step 7: Bake

  1. Pour the cake batter into the prepared baking pan and spread it evenly.
  2. Bake in the preheated oven for approximately 35-40 minutes, or until a toothpick or cake tester inserted into the center comes out clean.
