Ingredients:
- Meat:
- 1 1/2 lbs Ground beef
- Produce:
- 1 Onion
- 1/2 cup Fresh parsley
- 1 (10 ounce) package Frozen petite peas
- 3 Potatoes
- 1 cup Raisins
- 1 Spring onion
- Refrigerated:
- 3 Eggs, hard-cooked
- 2 Eggs
- Condiments:
- 1 (2.25 ounce) can Black olives
- 3 tbsp Jalapeno sauce
- Baking & Spices:
- 6 cups All-purpose flour
- 1/4 tsp Black pepper
- 5 tsp Paprika
- 2 1/2 tsp Salt
- 16 tsp White sugar
- Oils & Vinegars:
- 1 1/2 tbsp Olive oil
- Nuts & Seeds:
- 1/4 tsp Ground cumin
- Dairy:
- 1 cup Butter
- Desserts:
- 1 (.25 ounce) package Unflavored gelatin
- Liquids:
- 1/2 cup Water
- 1 1/2 cups Hot water
Instructions:
- Prepare the Dough:
- In a large mixing bowl, combine the all-purpose flour, salt, sugar, and paprika. Gradually add the olive oil and hot water, mixing until a soft dough forms. Knead the dough on a floured surface until smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.
- Prepare the Filling:
- Heat the olive oil in a skillet over medium heat. Add the ground beef and cook until browned. Add the diced onion, minced garlic, and ground cumin, cooking until the onion is translucent. Stir in the chopped parsley, frozen peas, diced potatoes, and jalapeno sauce. Cook for an additional 5 minutes, then remove from heat and let the filling cool.
- Assemble the Salteñas:
- Divide the dough into small balls. Roll out each ball into a circle, about 6 inches in diameter. Place a spoonful of the filling in the center of each circle. Add a slice of hard-cooked egg and a few raisins on top of the filling. Fold the dough over the filling to form a half-moon shape, pinching the edges to seal.
- Bake the Salteñas:
- Preheat the oven to 375°F (190°C). Place the assembled salteñas on a baking sheet lined with parchment paper. Brush the tops of the salteñas with beaten egg for a golden finish. Bake for 25-30 minutes, or until the salteñas are golden brown and crispy.
- Serve and Enjoy:
- Allow the Bolivian Salteñas to cool slightly before serving. Enjoy these savory pastries warm, either as a snack or a meal, accompanied by your favorite dipping sauce or aji sauce for an extra kick of flavor.
Cook Notes and Variations:
- Spice Level: Adjust the amount of jalapeno sauce or add chopped chili peppers to the filling to increase or decrease the spiciness according to your preference.
- Vegetarian Option: Substitute the ground beef with plant-based meat alternatives or a mixture of cooked lentils and vegetables for a vegetarian version of Bolivian Salteñas.
- Sweet Variation: For a sweet twist, omit the savory filling ingredients and instead fill the dough with a mixture of diced apples, cinnamon, and brown sugar for a delicious dessert salteña.
Keto and Low Carb Version:
- Dough Replacement: Replace the all-purpose flour with a combination of almond flour and coconut flour for a low-carb dough alternative. Additionally, use a keto-friendly sweetener instead of sugar in the dough.
- Filling Modification: Opt for a filling consisting of seasoned ground turkey or chicken, diced bell peppers, onions, and mushrooms for a lower-carb option. Skip the potatoes and raisins to reduce the carb content further.
