This dish combines succulent beef, savory vegetables, and a rich gravy that will warm your heart and satisfy your taste buds.

Ingredients:

  • 3-4 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 2 cups beef broth
  • 1/2 cup red wine (optional)
  • 2 sprigs fresh rosemary (or 1 tablespoon dried rosemary)
  • 2 sprigs fresh thyme (or 1 tablespoon dried thyme)
  • 1 bay leaf
  • Salt and black pepper, to taste

Instructions:

Step 1: Sear the Chuck Roast

  1. Set your Instant Pot to “Sauté” mode. Add the olive oil and allow it to heat up.
  2. Season the chuck roast generously with salt and black pepper.
  3. Sear the roast on all sides in the Instant Pot until it’s nicely browned. This step locks in the flavor and juices.

Step 2: Add the Aromatics

  1. Add the chopped onion and minced garlic to the Instant Pot. Sauté for about 2-3 minutes until they become fragrant and translucent.

Step 3: Layer the Vegetables and Herbs

  1. Place the chopped carrots, potatoes, and celery on top of the roast in the Instant Pot.
  2. Pour in the beef broth and red wine (if using).
  3. Tuck the fresh rosemary, thyme, and bay leaf into the Instant Pot.

Step 4: Pressure Cook

  1. Close the Instant Pot lid, set the valve to the sealing position, and cancel the “Sauté” mode.
  2. Set the Instant Pot to “Manual” or “Pressure Cook” mode and cook for approximately 60-75 minutes, depending on the size of your roast, for a tender result.

Step 5: Natural Release

  1. After the cooking time, allow for a natural pressure release for about 10-15 minutes before opening the Instant Pot.

Step 6: Serve and Enjoy

  1. Carefully remove the chuck roast and vegetables from the Instant Pot.
  2. Slice the roast into thick pieces and serve it with the vegetables and the rich, savory gravy.

Notes:

  • The red wine adds depth of flavor, but if you prefer not to use it, you can substitute it with more beef broth.
  • You can customize this recipe by adding other vegetables like green beans, mushrooms, or pearl onions.
  • Instant Pot Pot Roast is excellent when served with freshly baked bread or over a bed of mashed potatoes.

Instant Pot Pot Roast is a delicious and efficient way to enjoy a classic comfort dish. With the Instant Pot’s speed and convenience, you can have a tender and flavorful pot roast ready in a fraction of the time. This recipe is perfect for those days when you want a hearty, satisfying meal without the long wait. Enjoy the rich flavors and comforting aroma of Instant Pot Pot Roast with your loved ones.
