Danish Apple Cake Recipe

 

For the Cake:

  • 4 large apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup milk

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon

For Serving (Optional):

  • Powdered sugar, for dusting
  • Vanilla ice cream or whipped cream

Instructions:

Step 1: Preheat the Oven and Prepare the Apples

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large bowl, toss the sliced apples with lemon juice, granulated sugar, cinnamon, and nutmeg until evenly coated. Set aside.

Step 2: Make the Cake Batter

  1. In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs, one at a time, until well combined. Stir in the vanilla extract.
  3. In another bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until the batter is smooth and well combined.

Step 3: Assemble the Cake

  1. Spread half of the cake batter evenly into the prepared baking dish.
  2. Arrange the sliced apples over the batter in an even layer.
  3. Spoon the remaining cake batter over the apples, spreading it out gently to cover them.

Step 4: Make the Streusel Topping

  1. In a small bowl, combine the flour, brown sugar, melted butter, and cinnamon. Mix until crumbly.

Step 5: Bake the Cake

  1. Sprinkle the streusel topping evenly over the cake batter.
  2. Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.

Step 6: Serve and Enjoy!

  1. Remove the Danish apple cake from the oven and let it cool slightly before serving.
  2. Dust the top of the cake with powdered sugar, if desired.
  3. Serve warm slices of the cake on their own or with a scoop of vanilla ice cream or a dollop of whipped cream.
