Step 2: Cook the Chicken

  1. In a large skillet over medium-high heat, melt 2 tablespoons of butter with the olive oil.
  2. Add the chicken breasts and cook for about 4-5 minutes per side or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 3: Sauté Mushrooms

  1. In the same skillet, add the remaining 2 tablespoons of butter.
  2. Add the sliced mushrooms and sauté until they are golden brown.

Step 4: Deglaze with Wine

  1. Pour in the Marsala wine to deglaze the skillet, scraping up any browned bits from the bottom.

Step 5: Create the Sauce

  1. Stir in the chicken broth and let the mixture simmer for a few minutes to reduce slightly.
  2. Return the cooked chicken breasts to the skillet, nestling them into the sauce.
  3. Sprinkle the shredded mozzarella and grated Parmesan over the chicken.

Step 6: Finish Under Broiler

  1. Transfer the skillet to the oven and broil for 2-3 minutes or until the cheese is melted and bubbly.

Step 7: Garnish and Serve

  1. Remove from the oven, garnish with chopped fresh parsley, and serve the Chicken Lombardy over pasta or with crusty bread.

Notes:

  • If you prefer a thicker sauce, you can mix a tablespoon of flour with a tablespoon of water and whisk it into the sauce during the simmering step.
  • Feel free to add a touch of heavy cream for an even richer sauce.
  • Serve the Chicken Lombardy with a side of sautéed vegetables or a simple green salad for a well-rounded meal.
