Ingredients:

For the Birria Marinade:

  • 2 pounds chicken wings, separated into drumettes and flats
  • 4 dried guajillo chiles, stemmed and seeded
  • 2 dried ancho chiles, stemmed and seeded
  • 1 medium onion, roughly chopped
  • 4 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cloves
  • Salt and pepper to taste
  • 1 cup water

For the Consomé:

  • 4 cups chicken broth
  • 1/2 cup finely chopped cilantro
  • 1/2 cup finely chopped white onion
  • Lime wedges for serving

For Frying:

  • Vegetable oil

Instructions:

Step 1: Prepare the Birria Marinade

  1. Heat a dry skillet over medium-high heat and toast the dried guajillo and ancho chiles for about 1-2 minutes on each side until they become fragrant. Be careful not to burn them.
  2. Place the toasted chiles in a bowl of hot water and let them soak for about 15-20 minutes until they become soft.
  3. In a blender, combine the soaked chiles, roughly chopped onion, garlic cloves, ground cumin, dried oregano, ground cloves, salt, pepper, and 1 cup of water.
  4. Blend until you have a smooth, vibrant red marinade.

Step 2: Marinate the Chicken Wings

  1. Place the chicken wings in a large bowl.
  2. Pour the birria marinade over the wings and toss them to ensure they are evenly coated.
  3. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.

Step 3: Prepare the Consomé

  1. In a saucepan, heat the chicken broth over medium heat until it simmers.
  2. Stir in the finely chopped cilantro and white onion.
  3. Reduce the heat and let the consomé simmer gently while you prepare the wings.

Step 4: Fry the Chicken Wings

  1. In a large, deep skillet or pot, heat vegetable oil to 350°F (175°C).
  2. Carefully add the marinated chicken wings in batches, being mindful not to overcrowd the pan.
  3. Fry the wings for about 8-10 minutes per batch, or until they are crispy and cooked through. The internal temperature should reach 165°F (74°C).
  4. Transfer the cooked wings to a paper towel-lined plate to drain any excess oil.
