In this recipe, we’ll guide you through creating your own batch of zucchini-filled muffins that are both delicious and nutritious.

Ingredients:

For the Zucchini-Filled Muffins:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins or chocolate chips (optional)

Instructions:

Step 1: Preheat the Oven and Prepare Muffin Pan

  1. Preheat your oven to 350°F (175°C). Grease or line a standard 12-cup muffin pan with paper liners.

Step 2: Combine Dry Ingredients

  1. In a large mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Mix them together until well combined.

Step 3: Prepare the Wet Ingredients

  1. In a separate bowl, whisk the eggs, vegetable oil (or melted butter), and vanilla extract together until smooth.

Step 4: Combine Wet and Dry Ingredients

  1. Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Avoid overmixing; a few lumps are okay.

Step 5: Add Grated Zucchini

  1. Gently fold in the grated zucchini into the muffin batter. The moisture from the zucchini will add to the overall consistency of the batter.

Step 6: Optional Add-Ins

  1. If desired, fold in chopped walnuts or pecans for added crunch, and raisins or chocolate chips for extra sweetness. These additions are entirely optional and can be adjusted to your taste.

Step 7: Fill Muffin Cups

  1. Spoon the muffin batter into the prepared muffin cups, filling each cup about 2/3 full. Evenly distribute the batter among the cups.

Step 8: Bake the Muffins

  1. Place the muffin pan in the preheated oven.
  2. Bake for approximately 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean, with a few moist crumbs attached.

Step 9: Cool and Enjoy

  1. Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes.
  2. Afterward, transfer the muffins to a wire rack to cool completely.

Step 10: Serve and Savor

  1. Serve your homemade zucchini-filled muffins as a delightful breakfast or snack. Enjoy the moist and flavorful bites, knowing that you’ve incorporated the goodness of zucchini into these delicious treats.

Zucchini-filled muffins are a delightful way to sneak in some extra vegetables while savoring a delicious treat. These moist and flavorful muffins, with a hint of spice and optional add-ins, are perfect for any time of day. Whether you’re enjoying them fresh out of the oven or storing them for later, these muffins are bound to become a favorite in your household.
